This white wine is made exclusively from grapes from organic farming in the vineyards of the De Santa Rosalía estate.
This wine is made from a blend of the Verdejo and Viura (Macabeu) varieties.
After traditional harvests, the bunches are selected by hand. Each plot is placed in vats separately in order to preserve the characteristics of each of them as much as possible. The skins remain in contact with the must for 6 to 8 hours at low temperature (8-10 ° C) in order to guarantee the richness of the aromas. Fermentation takes place at a temperature of 14-15 ° C. Subsequently, the wine is left in its lees for 6 months during which it will acquire greater fullness and better roundness in the mouth.
